Good tea starts with good water, brought to the boil and used while it is fresh. This collection brings together kettles for two different jobs. Two whistling stovetop kettles heat your water on the hob and tell you when it is ready, so you do not have to watch it. A gooseneck kettle takes over once the water is hot, with a slow, thin pour for small teapots, loose leaves and coffee filters. All three have a stainless steel body. Capacities run from 350 ml for a single serving to 3 L for a busy kitchen.
The two whistling kettles have a whistle built into the spout that sounds when the water boils. The 2 L kettle in silver and the 3 L in white work on gas, electric, ceramic and induction hobs. The 2.5 L vintage-style kettle, in green, beige or blue, works on gas, electric and induction hobs and has a handle that folds down for storage. Fill any of them to no more than 80% of its capacity, turn off the heat when it whistles and lift it by the handle. Never heat a kettle empty. On gas, keep the flame under the base.
A gooseneck kettle is made for control. Its long, thin spout, with a 5 mm opening, lets you pour slowly and place the water exactly where you want it: over loose leaves, into a small teapot, or through a coffee filter. It comes in 350 ml and 600 ml, in silver or black. It is made for pouring, not for boiling, so heat your water in your usual kettle first, then pour it in and put the lid on. Do not put it on a hob or over a flame, and hold it by the handle only.
Looking after a kettle takes a minute. Wash it by hand with a soft sponge, avoid abrasive pads, especially on the black finish, and empty and dry it after each use. In hard-water areas, descale the whistling kettles now and then by boiling equal parts water and white vinegar, then rinse well. Not sure which to choose? Pick a whistling kettle to heat water on the hob, and a gooseneck for slow, careful pours.
